Mazafati date is one of the oldest cultivated fruits in Iran. It has high moisture content and is the most delicious type of date in the world. This date is cultivated in the southern regions of Iran, mainly in Bam, Jiroft and Kahnuj. It is oval in shape and dark brown to black in color, with a thin shell. The distinguishing feature of this date is its juicy and relatively high humidity. The moisture amount of in the product is different depending on the field, cultivation and harvest. The size of the high-quality type of this date is between 2.5 and 4.5 cm, and the suitable temperature for its storage is -5 to 5 degrees Celsius. Due to its natural sugars such as glucose, sucrose, and fructose, this fruit is rich in natural fibers, full of vitamins and minerals, and low in fat and cholesterol-free. There are 400 different varieties of Mazafati dates that 50 of which are known in international markets and are exported all over the world. The higher the amount of juice in a date, the higher the quality and grade of that date.
